Grilled cheese with caramelized onions

I ixnayed cooking the pea soup last night because it was just too hot out. We scrounged together our spare change, went to coin star, and had enough for some subs. Much better.
I woke up today though and decided I really wanted to try that grilled cheese idea from yesterday…so I did.

First thing this morning I cooked up some onions. Actually not a bad way to start the day. A little bread, butter, and cheese = ooey gooey caramelized goodness.
4 thin slices of bread (using the French Bread Recipe from yesterday)
a little butter
two small slices of cheese (muenster for me)
1 onion, caramelized (you only need a bit for these but you can use the leftovers for just about anything – fajitas, pizzas, or more sandwiches!)
Directions:
You know what to do, it’s just a grilled cheese for pete’s sake.

French Bread

I made bread today!

This was my first time making french bread and I was pretty skeptical of it turning out how I wanted. Surprisingly, after only a few minutes of work and two hours of waiting, I had some very yummy bread.
This is it right out of the oven. Goldeny goodness!

I smothered a few slices in butter and now I’m trying to keep myself out of the kitchen so I don’t eat half the loaf.

I had wanted to caramelize some onions, take some muenster, and make an amazing grilled cheese with this bread, but the slices seem too small for that. I think I may try cooking some split pea soup for the first time in my life (I’ve never even tasted it before) and eat the bread on the side.
The recipe is straight from La Fuji Mama. The only thing I did differently was to cut the batch in half to make only one loaf, and I was out of eggs so I used milk for the wash instead of egg white.
French Bread
1 packet (1/4 oz./7 g each) dry active yeast
1/4 C warm water
1/4 tsp sugar
1 C hot water
1 1/2 TBS sugar
2 tsp salt
1/4 cup oil
3 C all-purpose flour
1. Dissolve yeast, warm water, and 1/4 teaspoon granulated sugar in a small bowl.
2. In a large bowl, combine hot water, 1 1/2 TBS sugar, salt, and oil. Add 2 cups of flour and mix well. Stir in yeast mixture.
3. Add 1 cup more flour and mix until well blended. (At this point your dough will still be quite sticky). Leave in bowl and let rise for 1 hour.
4. Roll dough piece on a floured surface into the length desired then roll up length wise like a jelly roll.
5. Put on a greased cookie sheet, sealed side down, and tuck the ends under. Slash diagonally across the top every couple of inches with a sharp knife. Brush with milk. Preheat oven to 400 degrees Fahrenheit. Let the loaf rise 30 more minutes then bake for 25-30 minutes.

P.S. I have been itching to go to the beach for days now. I’m looking at getting a new suit for a possible weekend trip to the coast.

Brevard Zoo

Matthew and I went to the zoo yesterday and I finally got photos of giraffes!!!

This is big. I’ve been wanting to photograph giraffes for two or three years now and each time I went to a zoo or park…they were gone! Hiding, sleeping, moved, etc.
I ran to the giraffe exhibit as soon as we got there and nearly peed on myself when I saw they were all out feeding. Of course I acted like a pissy 3 year old that OTHER people were in my way, and how dare THEY try to get photos when I’M the only one that deserves to be there *heavy sarcasm*.
And I tried not to be too jealous of the older men with their nicer cameras and giant lenses.




This is all I have to show for right now but there are many more to come :)

Back from hiatus

Almost two weeks since an update. What can I say? Sometimes you just need a break from blog land.
It’s been nice not thinking about writing for awhile, though I do regret not keeping up with my friends journals either.
Today I’m sitting in bed feeling icky with sinusy junk and wishing for some magical inspiration to hit me. I have a few ideas tinkering around in my brain but it feels like I never let them come to fruition. I’d like to actually stick to my guns and follow through on a project sometime. Hopefully when I start feeling better some motivation with follow.
I’m thankful to have several projects to keep me busy right now. I have two painting commissions I need to start on and the wedding photos from March to finish up. In between that I have the photos I take for myself to go through, plus the aforementioned “ideas” that may or may not come to pass.
Last Wednesday my friend Caroline treated me with a ticket to Sea World with her and her daughter Shelby, so long as a took a bajillion pictures of everything. They’re taking a backseat to the wedding photos so I only have two to show for now.

Sugar overload

Happy Easter! May I offer you some diabetes?
As is usual around this time of month, I start having some cravings. Usually, I go for the salty stuff. Potato chips, french fries…basically any food type substance that has been fried and doused in salt.
Tonight though, I had a new craving. Actually, a craving that has come and gone for several months, but it was renewed in full for this evening; DONUTS. And not that Krispy Kreme junk, I wanted Publix donuts. They are soft pillowy nuggets from heaven and no other donut compares.
So I sent Matthew out to get some, which he did gladly because A) he spoils me, and B) he’s the biggest sugar addict I’ve ever met and would drive anywhere as long as sweets were involved.
He came back with this:

Some of you may remember me mentioning how Matthew will go out for a single item and then return with…many more items. Today was no exception.
According to him, these are our “Easter treats!”. Apparently, Easter is a time of rejoicing in corn syrup, hydrogenated oils, and various artificial ingredients.
I wondered if we could have just gotten some regular “Easter groceries” but he thought that the $20 bill he had forgotten about and then found today (without me knowing) was best used this way.
So, if anyone wants to stop by tomorrow, we will be celebrating and remembering our Lord with Klondike bars and Nesquick. Join the party.
P.S. For anyone wondering why his name is written on the box of donuts, I had him call the store first to make sure they had them in stock and put some on hold for us. Last box, baby!
